Ingredients
For the rice:
- 1½ cups brown rice

For the stir-fry:
- 400 g (14 oz) firm tofu, pressed and cubed
- 2 tbsp soy sauce (for marinating tofu)
- 1 tbsp cornstarch (optional, for crisping)
- 1 tbsp sesame oil or neutral oil
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 broccoli head, cut into florets
- 2 carrots, sliced thin
- 2 cloves garlic, minced
- 1 tsp grated ginger
For the sauce:
- 3 tbsp soy sauce
- 1 tbsp rice vinegar or lime juice
